See if your florist works with organic or sustainable growth farmers.
Or don't use flowers at all. Vegetables and other non-floral elements can look just as pretty.
Consider favors that pull double duty as place cards.
Support companies that are environmentally conscious, like Chantecaille.
Request organic local food and products, like coffee, chocolate, and sugar.
Use an organization like The I Do Foundation when you register.

Another good way to be green is to buy your flowers from local farmer's markets if you're doing them yourself. They're often cheaper, too!
