Superbowl Sunday may be fast approaching, but that doesn't mean you have to limit yourself to a beer and wings diet all weekend. This Raspberry Lime Tequila Cocktail, created by Carrie Vitt at Deliciously Organic [1], is a blend of raspberries, mint, honey, and a squeeze of lime juice. It looks and smells so fresh that you'll want to dive right into it. You can even whip up a batch (sans sparkling water) and store it in a pitcher in the fridge overnight, making day-of party preparations much easier. Serve it as a signature drink [2] at your wedding or bridal shower [3], or as a pick-me-up during halftime this Sunday. Cheers!

The Raspberry Lime Tequila Cocktail (Serves 1)

8  raspberries
1 teaspoon honey
Juice of 1/2 a lime
2 fresh mint leaves
1 oz. tequila (gin works just as well if you aren't a tequila person)
Chilled sparkling water

Directions: Place raspberries, honey, and lime juice in a small measuring cup. Muddle mixture until raspberries release their juices. Strain through a fine mesh sieve, pressing down on solids to remove all liquid. Add mint leaves to the strained mixture and muddle to release mint fragrance. Pour mixture over ice and top with tequila and sparkling water. Serve immediately.
