Cocktail Hour: Raspberry Champagne

With the chaos of the holiday season officially upon us, I thought I'd share a beverage that is beautiful, delicious, and a cinch to make: the Raspberry Champagne cocktail, courtesy of Barbie over at Wishful Chef. Concocted with fresh raspberries, a spoonful of honey, and bubbly Champagne, this drink is vibrant and flavorful. Plus, it takes just 10 minutes to whip up a batch, and you can prepare the puree ahead of time. Serve it for a festive Champagne toast at your winter wedding, or whip up a batch for a brunch-themed bridal shower. Cheers!

The Raspberry Champagne Cocktail (Serves 4)

1 cup raspberries (with a few extras for garnish)
1-2 tablespoons honey, to taste
2 tablespoons water
1 bottle Champagne or dry sparkling wine

Directions: Using a blender or hand blender, puree the raspberries with honey and water until smooth. Strain the puree through a fine sieve into a small bowl by gently pressing with a spatula and catching the seeds. Evenly spoon the raspberry puree in the bottom of each of your serving glasses. Then fill each glass with champagne and garnish with raspberries.

    After champagne, cocktails are surely the next best drink to serve at a wedding, so it would follow that champagne cocktails are even better!

    And so easy to colour coordinate to match the wedding colour scheme too using other fruits such as mango, cherry, blackberry, pineapple, pomegranete, kiwi or passion fruit.
